Mini coffee info guide: What to pay attention to in order to drink better coffee?

Freshly roasted and ground coffee
Use coffee that has not been roasted more than 6 months ago. For maximum flavor and aroma, grind it just before preparation.

Storage
Store the coffee in a room that does not exceed 22°C. It is mainly damaged by heat and light. You can also store coffee in the freezer. Coffee's enemy is oxygen, so always squeeze the air out of the bag before closing.

Grinding
Different preparations require different grinds. Turkish coffee needs the finest, followed by espresso and cafeteria. For filter coffee, we need coarser ground coffee. The coarsest grinding is for the French press.

Water
We recommend using filtered water. The taste of the coffee will be better, and you will also protect your devices from limescale.

Temperature
Coffee is sensitive to temperature. In all preparations, it should not exceed 94-95°C. For cold brew coffee, use cold water, to which you can also add ice cubes.

Cleanliness
Regularly clean your coffee machines and accessories, including the grinder and water heater. Limescale affects the taste of water and consequently coffee.

The art of coffee cultivation

The Yellow Honey process selects only well-ripened coffee cherries with a sugar content above 21 Brix, which ensures high natural sweetness and a more pronounced aromatic potential. After harvesting, the cherries are soaked in water for 6 hours, then the pulp is removed, leaving approximately 60 % of mucilage on the beans. It is this sugar-rich layer that significantly influences the development of the sweetness, fullness of body and fruity character of the coffee during drying. The beans are then slowly dried on African beds in the sun for approximately 20-22 days, until the moisture content drops to approximately 10.5 %. This is followed by a 16-day moisture stabilization in storage, where the moisture within the beans is evenly distributed and the flavor profile is further calmed. The coffee is then stored in GrainPro bags, and after final stabilization, individual batches are re-assessed by cupping and sorted according to quality.

Description of the region and the coffee grower

Tres Milagros Farm was founded in 2013 in the renowned Dota–Tarrazú region of Costa Rica by the Facussé family in collaboration with Camilo Merizalde. The project builds on the knowledge and experience gained on the Santuario Colombia estate, with a clear focus on quality and innovation. Initially planted with the Bourbon variety, the plantations were later expanded to include various exotic varieties. In 2020, a modern processing plant was completed, allowing for more precise control of post-harvest processes. Today, Santuario Costa Rica, under the leadership of Nelsyn Hernandez, processes cherries from 30 affiliated farms, which together cover approximately 350 hectares and form the Los Milagros–Santuario program.
